Using her complex culinary knowledge cultivated from years of working as a chef internationally, Tess's food uses beautiful seasonal Mediterranean produce and exotic touches from the Middle East and Far East, to form her creative all-day brunch menu. Her collaboration with Pikes Hotel gives her the chance to get creative with recipe development, but also "connect with the astonishing artisans and food industry folk on the island".
